Saffron rice with chicken
Ingredients
480 g Basmati rice
1 Chicken
2 chopped garlic cloves
2 chopped onions
1 chopped carrot
1 tsp cumin
100 ml brewed saffron
100 g peeled organic pistachios
Salt, pepper and curcuma: at your discretion

Preparation

At first, wash the rice and place it for half an hour in water and some salt.

In the meantime, cut the chicken and put it with a chopped onion and water in a pot. Heat up in order to cook the chicken.

Chop finely another onion, add some oil in a pot and sear the onion with some curcuma in the oil. Add garlic and cumin and keep on searing. Then, mix the carrot to these ingredients. Add the cooked chicken to the other products and let it sear a little bit.

Mix the soaked rice, 550 ml water, brewed saffron and pepper to the ingredients in the pot.

As soon as the rice has absorbed the water, reduce the heat and let it simmer for 45 minutes.

In the end, decorate the rice with the pistachios.
