Steam half the onion in butter, add the oat flakes and continue to steam. Add the carrot, leek and parsley root and steam. Douse with water. Add the bouillon, marjoram and lovage. Cover and simmer on low heat for 10 minutes, stir occasionally. Add saffron threads and simmer for another 10 minutes.
Add the parsley and season.
Serve the soup in warmed soup bowls, garnish and drizzle with a tablespoon of olive oil.
